I am the recipe creator, food lover, and home cook behind Simply Mindfull.

I started Simply Mindfull because I wanted a place to share the kind of food I actually love to cook and eat—recipes that make you feel good without making you feel like you have to give up everything you love.

Around here, you won’t find strict diets, complicated food rules, or the idea that every meal has to be perfectly “healthy.” Instead, I believe in finding a balance between foods that nourish you and foods you simply enjoy.

Because eating well should still taste really good.

The Simply Mindfull Approach

My approach to food is simple: focus on what you can add to your plate, not everything you need to take away.

That might mean adding vegetables to a comforting pasta dish, making a protein-packed dinner the whole family will enjoy, or serving something fresh alongside a meal that’s purely for fun.

Some recipes here are lighter and nutrient-packed. Others are cheesy, creamy, indulgent, or made for dessert, and both have a place at the table.

Simply Mindfull isn’t about following a particular diet. It’s about enjoying delicious, approachable food while finding a balance that works for real life.

I especially love creating recipes that are:

Why “Simply Mindfull”?

For me, being mindful about food doesn’t mean obsessing over every ingredient or trying to eat perfectly.

It is simply about being a little more intentional.

Choosing foods that help you feel your best most of the time, enjoying the foods you love without guilt, and remembering that one meal doesn’t make or break a healthy lifestyle.

That is the heart behind Simply Mindfull.

A Little About Me

When I am not in the kitchen, I am usually spending time with my husband, George, our son, Myles, and our two crazy dogs, Bailey and Riley.

But here is the funny part: I definitely wasn’t always someone who loved to cook. Before George and I started dating, my idea of making dinner was heating up a frozen pizza, making Top Ramen or popcorn, or grabbing fast food. Cooking just wasn’t something I knew how or really cared to do.

That slowly started to change when I began trying meal kits like HelloFresh and picking up pre-prepared meal options from the grocery store. Having the ingredients and instructions laid out for me made cooking feel approachable, and little by little, I started becoming more comfortable in the kitchen. Eventually, following recipes turned into experimenting with them, and experimenting turned into creating recipes of my own.

These days, I genuinely love trying new foods, playing around with flavors, and finding inspiration everywhere from watching way too much Food Network to scrolling through food creators on TikTok and Instagram. Sometimes an idea inspires me to put my own spin on something, and other times I start experimenting with whatever sounds good that day.

And one thing you can count on: if I wouldn’t happily make it and eat it again, you won’t find it on Simply Mindfull. I only share recipes I genuinely enjoy and think are worth making.

It still makes me laugh that the girl who considered popcorn a perfectly acceptable dinner now runs a recipe blog, but maybe that is part of the point. You don’t have to be a trained chef to make really good food. You just have to be willing to get in the kitchen and give it a try!
