Chicken
  • 3 chicken breasts
  • 1 tbsp Greek seasoning or Italian seasoning

Fattoush Salad
  • 1 small red onion thinly sliced
  • 1 English cucumber diced or sliced
  • cups cherry tomatoes halved or sliced
  • 5 tbsp olive oil
  • 3 tbsp red wine vinegar
  • ½ tsp salt
  • ½ tsp black pepper
For Serving
  • 6 pita breads
  • Tzatziki sauce optional
  • Crumbled feta optional
  • Kalamata olives optional

Method
 

  1. Preheat the oven to 425°F and prepare the vegetables.
  2. Place the chicken breasts on a large baking sheet. Season with Greek seasoning, salt, and pepper.
  3. Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F.
  4. While the chicken cooks, prepare the salad. Add the sliced red onion, cucumber, and cherry tomatoes to a large bowl.
  5. Pour in the olive oil and red wine vinegar, then season with salt and pepper. Toss everything together and let the flavors marinate while the chicken finishes cooking.
  6. Once cooked, shred or dice the chicken and add it to the salad mixture. Toss until evenly coated.
