  • cup soy sauce reduced slightly for balance
  • ½ cup pineapple juice
  • 1 tbsp rice vinegar
  • 1 tbsp ketchup reduced
  • 3 garlic cloves minced
  • 1 tsp fresh ginger minced
Chicken
  • 2 chicken breasts thinly sliced
Pineapple Salsa Topping
  • ¾ of a 20 oz can pineapple tidbits drained
  • 1 yellow bell pepper diced
  • 3 green onions sliced
  • 1 avocado diced
  • Juice of 1 lime
  • 1 tbsp champagne vinegar
  • ½ –1 tsp salt to taste
  • 1 tbsp fresh cilantro chopped
Rice
  • 1 cup white rice
  • 2 cups chicken broth

Method
 

Make the Sauce
  1. In a bowl, whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ketchup, garlic, and ginger.
