Ingredients
  

For the Salad
  • 5 oz baby romaine spring mix, or your favorite lettuce
  • 1 tbsp olive oil
  • 2 boneless skinless chicken breasts, diced
  • 1 ripe avocado diced
  • ½ small red onion thinly sliced
  • c sunflower seeds
  • tsp salt divided
  • ½ tsp black pepper
For the Dressing

Method
 

  1. Heat olive oil in a skillet over medium heat. Add the diced chicken and season with ½ tsp salt and ½ tsp pepper. Cook, stirring occasionally, until the chicken is golden and reaches an internal temperature of 165°F. Remove from heat and let cool slightly.
