Ingredients
  

For the Salad
  • 5 oz baby romaine spring mix, or your favorite lettuce
  • 1 tbsp olive oil
  • 2 boneless skinless chicken breasts, diced
  • 1 ripe avocado diced
  • ½ small red onion thinly sliced
  • c sunflower seeds
  • tsp salt divided
  • ½ tsp black pepper
For the Dressing
  • 1 batch Green Goddess Dressing (See recipe above)
Optional Add-Ins
  • Cherry tomatoes
  • Cucumber slices
  • Crumbled feta or goat cheese
  • Cooked quinoa or farro for extra heartiness

Method
 

  1. Heat olive oil in a skillet over medium heat. Add the diced chicken and season with ½ tsp salt and ½ tsp pepper. Cook, stirring occasionally, until the chicken is golden and reaches an internal temperature of 165°F. Remove from heat and let cool slightly.
  2. In a large bowl, add the lettuce, cooked chicken, avocado, red onion, sunflower seeds, and remaining 1 tsp salt.
  3. Drizzle with Green Goddess Dressing and toss gently until everything is evenly coated.
  4. Serve immediately and enjoy!

Notes

If you are meal prepping, store the salad and dressing separately.
