Cowboy Caviar
  • 1 15 oz can black beans, rinsed and drained
  • 1 cup corn fresh, canned, or thawed frozen
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 1 jalapeño finely diced
  • 2 Roma tomatoes diced
  • ½ red onion finely diced
  • 1 tablespoon fresh cilantro chopped
Cilantro Lime Dressing
  • Juice and zest of 1 lime
  • 1 tablespoon olive oil
  • 1 garlic clove minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon chipotle powder or chili powder for less heat

Method
 

Prep the ingredients
