Slow Cooker Mississippi Pot Roast

There is nothing better than a dinner that takes just a few minutes to prep and turns into something rich, comforting, and completely delicious. This Slow Cooker Mississippi Pot Roast is one of those recipes. Tender chuck roast cooks low and slow with ranch seasoning, au jus, butter, and pepperoncini until it practically falls apart with a fork.
The pepperoncini add just the right amount of tang to balance the rich, savory beef without making the dish spicy. Serve it over creamy mashed potatoes, rice, or egg noodles with plenty of those flavorful cooking juices spooned over the top for an easy comfort-food dinner the whole family can enjoy.
How This Recipe Supports Feeling Good
Comfort food can absolutely have a place in a balanced lifestyle, especially when it makes sitting down to a satisfying homemade meal easier. Chuck roast provides protein, iron, zinc, and vitamin B12, while the slow cooker makes it possible to get a hearty dinner on the table with very little hands-on work.
Pair the pot roast with mashed potatoes and a vegetable like green beans, carrots, or broccoli for a more balanced meal with protein, carbohydrates, and produce. You can also adjust the amount of butter or choose lower-sodium seasoning mixes if you want to make the recipe fit your preferences.
