Method

Cook the Rice
  1. Add rinsed rice and water to a small pot. Bring to a boil, then reduce to a simmer, cover, and cook for 18–20 minutes.
  2. Remove from heat and let sit covered for 10 minutes. Fluff with a fork, then stir in rice vinegar while still warm.
Make the Crab Mixture
  1. In a medium bowl, combine: the chopped imitation crab, cream cheese, sour cream, soy sauce, Worcestershire sauce, garlic powder, salt, and pepper.
  2. Mix until smooth and creamy. Refrigerate until ready to use.
Prepare the Rice Cups
  1. Preheat oven to 400°F.
  2. Lightly spray a muffin tin with avocado oil. Add about 2–3 tablespoons of rice into each cup.
  3. Using the back of a spoon or a small measuring cup, press the rice firmly into the bottom and slightly up the sides to form a cup shape. Tip: Wet your spoon or fingers to prevent sticking.
  4. Bake for 20 minutes, or until the edges are lightly golden and crisp.
  5. Let them cool for 5–10 minutes before removing so they hold their shape.
Make the Bang Bang Sauce
  1. In a small bowl, whisk together the mayo, sweet chili sauce, sriracha, lime juice, and garlic powder.
  2. Taste and adjust spice or sweetness as desired.
Assemble
  1. Fill each rice cup with the crab mixture.
  2. Drizzle with bang bang sauce.
  3. Add your favorite toppings.
