  • 15 oz whole milk ricotta cheese
  • 1 tbsp olive oil
  • 2 tbsp honey
Toast
  • Brioche bread sliced

Method
 

Directions
    Make the Honey-Whipped Ricotta
    1. Add ricotta, olive oil, and honey to a stand mixer fitted with the whisk attachment, or to a bowl using a hand mixer.
    2. Whip on medium speed for about 5 minutes, until the ricotta is fluffy, smooth, and light in texture.
    3. Scrape down the sides as needed to ensure even whipping.
    Assemble the Toast
    1. Toast brioche slices until golden and lightly crisp.
    2. Spread whipped ricotta generously over the toast.
    3. Top with fresh fruit of choice.
    4. Finish with a light drizzle of honey and serve immediately.
