Ingredients
  

  • Avocado oil spray
  • 2 avocados sliced
  • 2 cups panko crumbs
  • 3 eggs
  • 2 cups flour
  • 2 tsp paprika
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp salt
  • 1 tsp pepper
  • Tortillas store-bought or homemade

Method
 

  1. Preheat the oven to 450°F.
  2. Prepare the avocados by halving them, removing the pit and peel, and slicing into about ¼-inch thick pieces.
  3. Create a breading station with three bowls:
  4. Bowl 1: Flour with a pinch of salt and pepper
  5. Bowl 2: Scrambled eggs
  6. Bowl 3: Panko crumbs mixed with paprika, onion powder, garlic powder, chili powder, salt, and pepper
  7. Bread the avocado slices by coating them in flour, then dipping them into the egg, and finally covering them in the seasoned panko.
  8. Place on a baking sheet, lightly spray with avocado oil, and bake for 25–30 minutes, until golden and crispy. The inside should remain creamy while the exterior becomes lightly crunchy.
  9. While the avocados bake, warm your tortillas and prepare your favorite toppings.
  10. Assemble the tacos by adding the crispy avocado slices to warm tortillas and finishing with your desired toppings.
