Ingredients
  

  • 1 tbsp olive oil
  • 4 chicken breasts or tenderloins
  • Salt and pepper to taste
  • 4 green onions sliced
  • ½ cup chicken broth
  • 2 tbsp balsamic vinegar
  • ½ cup dried cherries

Method
 

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then add to the pan. Cook for about 5–7 minutes per side, or until fully cooked and internal temperature reaches 165°F. Remove from skillet and set aside.
  2. In the same skillet, add green onions, chicken broth, balsamic vinegar, and dried cherries. Let simmer for 3–5 minutes, stirring occasionally, until the sauce slightly reduces and flavors come together.
  3. Return the chicken to the skillet and spoon the sauce over the top. Let it cook for another 1–2 minutes to coat the chicken.
  4. Plate the chicken and generously spoon the cherry balsamic sauce over the top. Finish with extra green onions if desired.

Notes

For extra flavor, sear the chicken until lightly golden before flipping.
If the sauce feels thin, let it simmer an extra minute to thicken.
You can swap dried cherries for cranberries if needed.
Works great with broccolini, green beans, or over rice.
