Chimichurri-Style Herb Dressing

Ingredients
  

  • ¼ cup white vinegar
  • ½ cup olive oil
  • 1 -2 small red peppers seeded or 1 tbsp red chili flakes for heat
  • ½ cup fresh parsley
  • ¼ cup fresh cilantro
  • ¾ tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper

Method
 

  1. Add white vinegar, olive oil, red peppers or chili flakes, parsley, cilantro, oregano, salt, and pepper to a blender or food processor.
  2. Blend until mostly smooth with a little texture remaining. Taste and adjust seasoning as needed.
