Easy Loaded Beef Nachos

Crispy tortilla chips layered with seasoned beef, black beans, melty cheese, and fresh toppings for an easy crowd-pleasing dinner, game day snack, or fun family meal. These loaded nachos are endlessly customizable and come together in about 20 minutes.

Ingredients
  

  • 11 oz bag tortilla chips
  • 1 lb ground beef
  • 1 taco seasoning packet
  • 15.5 oz can black beans drained and rinsed
  • 8.5 oz can corn drained
  • 1 bell pepper diced
  • ½ onion diced
  • 2.25 oz can sliced black olives
  • 1 jalapeño sliced or diced
  • 8 oz shredded Mexican-style cheese
  • 1 tomato diced
  • Green onions sliced
  • Fresh cilantro
  • Sour cream for serving
Optional Toppings
  • Avocado or guacamole
  • Pico de gallo
  • Salsa or salsa verde
  • Pickled jalapeños
  • Refried beans or pinto beans
  • Hot sauce
  • Queso fresco

Method
 

  1. Preheat oven to 350°F.
  2. Heat a large sauté pan over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
  3. Stir in the taco seasoning, black beans, corn, and water according to the taco seasoning packet directions. Simmer for 2–3 minutes until warmed through.
  4. Spread the tortilla chips evenly onto a large sheet pan or oven-safe platter.
  5. Top the chips with the beef and bean mixture, then sprinkle evenly with shredded cheese.
  6. Bake for 3–5 minutes, or until the cheese is melted.
  7. Remove from the oven and finish with tomato, bell pepper, onion, jalapeño, olives, green onion, cilantro, sour cream, and any additional toppings you love.

Notes

For extra crispy nachos, layer half the chips and toppings first, then repeat with a second layer.
Easily swap the ground beef for shredded chicken, ground turkey, chorizo, or a vegetarian meat alternative.
Great for game day, parties, or an easy weeknight dinner.
