Method
- Preheat oven to 350°F.
- Heat a large sauté pan over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
- Stir in the taco seasoning, black beans, corn, and water according to the taco seasoning packet directions. Simmer for 2–3 minutes until warmed through.
- Spread the tortilla chips evenly onto a large sheet pan or oven-safe platter.
- Top the chips with the beef and bean mixture, then sprinkle evenly with shredded cheese.
- Bake for 3–5 minutes, or until the cheese is melted.
- Remove from the oven and finish with tomato, bell pepper, onion, jalapeño, olives, green onion, cilantro, sour cream, and any additional toppings you love.
Notes
For extra crispy nachos, layer half the chips and toppings first, then repeat with a second layer.
Easily swap the ground beef for shredded chicken, ground turkey, chorizo, or a vegetarian meat alternative.
