Easy Shrimp Ceviche

This Easy Shrimp Ceviche is light, refreshing, and bursting with fresh citrus flavor. Made with juicy shrimp, creamy avocado, crisp English cucumber, sweet cherry tomatoes, and a hint of jalapeño, it’s the perfect no-fuss dish for warm days, quick lunches, or healthy entertaining.

Ingredients
  

  • ½ lb shrimp thawed raw or pre-cooked
  • ¼ c orange juice
  • 3 limes divided
  • 2 lemons divided
  • 1 jalapeño diced (seeds removed) or ⅛ c jarred jalapeños
  • ½ c cherry tomatoes halved
  • 1 English cucumber diced
  • ½ red onion finely diced
  • 1 avocado diced
  • ¼ c cilantro finely chopped
  • Salt and pepper to taste

Method
 

Prepare the shrimp
  1. This recipe works with either thawed, pre-cooked shrimp (served cold) or raw shrimp that you cook first.
  2. If using pre-cooked shrimp: Simply thaw and marinate in the orange juice, juice of 1 lemon, and juice of 2 limes for added flavor for at least 15 minutes. No heating required.
  3. If using raw shrimp: Add shrimp to the orange juice, lemon, and lime mixture and gently simmer until shrimp are fully cooked and opaque. Remove from heat, let cool slightly, then chop if desired.
  4. Set shrimp aside while you prepare the remaining ingredients.
Build the ceviche
  1. In a large bowl, combine shrimp, jalapeño, cherry tomatoes, cucumber, red onion, avocado, and cilantro.
Add fresh citrus
  1. Juice the remaining lemon and lime over the mixture. Gently toss to combine. Season with salt and pepper to taste.
Serve and enjoy
  1. Serve immediately or chill for 15–30 minutes to let flavors meld.
