Ingredients
  

  • 2 cups corn kernels fresh, frozen and thawed, or grilled
  • 1 red bell pepper diced
  • ½ red onion finely diced
  • 1 jalapeño seeded and minced
  • ¼ cup fresh cilantro chopped
  • Juice of 2 limes
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Add the corn, bell pepper, red onion, jalapeño, and cilantro to a large bowl.
  2. Drizzle with lime juice and olive oil.
  3. Season with salt and pepper.
  4. Toss until well combined.
  5. Refrigerate for at least 15 minutes before serving to allow the flavors to meld.
