Ingredients
  

Chicken
  • 4 boneless skinless chicken thighs
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 tbsp Greek seasoning
Bowls
  • 2 cups cooked rice
  • 1 cucumber diced
  • 1 tomato diced
  • ¼ red onion diced
  • Fresh parsley
Lemon Vinaigrette
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • ½ tsp oregano
  • Pinch salt and pepper

Method
 

  1. Combine chicken ingredients and marinate for at least 30 minutes.
  2. Grill or cook in a skillet until chicken reaches 165°F.
  3. Rest and slice.
  4. Mix vinaigrette ingredients.
  5. Assemble bowls with rice, vegetables, chicken, parsley, and vinaigrette.
