Ingredients
  

Pork Chops
  • 2 pork chops
  • 2 tbsp butter divided
  • 2 tbsp Italian seasoning
  • 1 tbsp dried parsley
  • ¼ tsp salt
  • ¼ tsp pepper
Mashed Sweet Potatoes
  • 2 sweet potatoes peeled and diced
  • 4 tbsp butter softened
  • ½ tsp salt
  • ½ tsp pepper

Method
 

Pork Chops
  1. Preheat oven to 400°F.
  2. In a small bowl, mix together Italian seasoning, parsley, salt, and pepper.
  3. Rub the seasoning mixture evenly over both sides of the pork chops.
  4. Place pork chops on a baking sheet or dish.
  5. Top each pork chop with 1 tbsp butter.
  6. Bake for 35–40 minutes, or until fully cooked and tender.
Mashed Sweet Potatoes
  1. Bring a pot of water to a boil and add diced sweet potatoes.
  2. Cook for 15 minutes, or until fork-tender.
  3. Drain and transfer to a mixing bowl.
  4. Add butter, salt, and pepper.
  5. Mash (or use a hand/stand mixer) until smooth and creamy.
  6. Taste and adjust seasoning as needed.
