Ingredients
  

Chicken
  • 2 chicken breasts
  • 1 tbsp olive oil
  • 2 tbsp Greek seasoning
  • Salt and pepper to taste
Mediterranean Cucumber Salad
  • 1 English cucumber diced
  • 2 Roma tomatoes diced
  • ¼ red onion finely diced
  • ¼ cup Kalamata olives sliced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • ½ tsp salt
  • ½ tsp pepper

Method
 

Cook the Chicken
  1. Pat the chicken breasts dry and season both sides with Greek seasoning, salt, and pepper.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat.
  3. Add the chicken and cook for 4–5 minutes per side, or until the internal temperature reaches 165°F.
  4. Remove from the pan and let the chicken rest for 5 minutes, then slice.
Make the Mediterranean Cucumber Salad
  1. In a medium bowl, combine the cucumber, tomatoes, red onion, and Kalamata olives.
  2. Add the olive oil, lemon juice, salt, and pepper.
  3. Toss until everything is well combined and set aside.
Assemble the Bowls
  1. Spread a generous layer of hummus on the bottom of each bowl.
  2. Add sliced chicken on top.
  3. Spoon the cucumber tomato salad into the bowl.
  4. Finish with crumbled feta cheese.
