Method
- Preheat oven to 425°F. Lightly grease a baking sheet or line it with parchment paper.
- In a large mixing bowl, combine the ground beef, spinach, sun-dried tomatoes, olives, goat cheese, egg, garlic powder, oregano, onion powder, salt, and pepper. Mix gently until just combined. Avoid overmixing to keep the meatballs tender.
- Using a cookie scoop or your hands, form the mixture into approximately 2 inch meatballs.
Choose your preferred cooking method:
Option 1
- Heat a large skillet over medium-high heat with a drizzle of avocado or olive oil.
- Sear the meatballs for 1–2 minutes per side until browned.
- Transfer to the prepared baking sheet.
- Bake for 12–15 minutes, or until the internal temperature reaches 160°F.
Option 2
- Arrange meatballs on the prepared baking sheet.
- Bake for 20-25 minutes, or until cooked through.
- Broil for the final 2 minutes for a beautifully browned exterior.

Notes
Finely chop the spinach and olives so the meatballs hold together well.
If using oil-packed sun-dried tomatoes, pat them dry before chopping.
For extra browning, don't skip the final broil.
