Oven-Baked Lemon Salmon with Garlic Butter Asparagus

This Oven-Baked Lemon Salmon with Garlic Butter Asparagus is an easy, fresh dinner made all on one pan. Tender salmon is simply seasoned with salt, pepper, and fresh lemon while the asparagus roasts alongside it with butter, garlic, and lemon. It’s a simple weeknight meal that’s ready in less than 30 minutes with minimal cleanup.

Ingredients
  

  • 2 salmon fillets
  • 1 bunch of asparagus
  • 1 lemon sliced
  • 2 garlic cloves minced
  • 2 tbsp butter thinly sliced
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper or lightly grease it, if desired.
  2. Wash the asparagus and trim off the tough, woody ends. Slice the lemon into rounds.
  3. Arrange the salmon fillets and asparagus in a single layer on the prepared baking sheet.
  4. Season the salmon and asparagus with salt and black pepper to taste.
  5. Sprinkle the minced garlic evenly over the asparagus, then arrange the thin slices of butter on top.
  6. Place lemon slices over the salmon and asparagus.
  7. Bake for 12–14 minutes, or until the asparagus is tender and the salmon is cooked through. The salmon should reach an internal temperature of 145°F in the thickest part.
  8. Remove the lemon slices from the asparagus. For a brighter lemon flavor, squeeze the roasted lemon slices over the asparagus and salmon just before serving.

Notes

Salmon thickness: Thicker salmon fillets may need a few additional minutes in the oven.
Asparagus: If your asparagus spears are particularly thin, begin checking them around 10 minutes.
Extra lemon flavor: Serve with fresh lemon wedges for squeezing over the salmon and asparagus.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
