Ingredients
  

  • 1 medium sweet potato
  • 1 –2 tbsp your favorite nut or seed butter peanut, almond, or sunflower
  • 1 –2 tbsp jam or jelly or mashed berries for a more whole-food option
Optional Add-Ons
  • Sprinkle of cinnamon
  • Pinch of sea salt
  • Chia seeds or flaxseeds
  • Granola or crushed nuts for crunch
  • Drizzle of maple syrup

Method
 

Cook the sweet potato:
  1. Microwave:
  2. Wash and pierce with a fork. Microwave for 5–7 minutes, until soft.
  3. Oven:
  4. Roast at 425°F for 40–50 minutes, until tender and caramelized.
Assemble:
  1. Slice the sweet potato open and gently mash the inside with a fork.
  2. Add your nut or seed butter and jam or jelly on top.
  3. Finish with optional toppings if desired.
