Method
Cook the sweet potato:
- Microwave:
- Wash and pierce with a fork. Microwave for 5–7 minutes, until soft.
- Oven:
- Roast at 425°F for 40–50 minutes, until tender and caramelized.
Assemble:
- Slice the sweet potato open and gently mash the inside with a fork.
- Add your nut or seed butter and jam or jelly on top.
- Finish with optional toppings if desired.
