- Preheat oven to 375°F.
- Add to a large casserole dish: rice, chicken, butternut squash, onion, black beans, chicken broth, lime juice, and all seasonings. Stir well so everything is evenly coated.
- Cover tightly with foil (key for soft, fluffy rice).
- Bake for 35-45 minutes, until rice is tender, chicken is cooked through, and liquid is absorbed.
- Optional finish: Remove foil, add cheese, and bake uncovered for 5 more minutes.
