Ingredients
  

  • 1 cup wild brown, or jasmine rice
  • 3 chicken breasts cut into bite-sized pieces
  • 2 cups butternut squash cubed
  • 1 white onion diced
  • 1 15 oz can black beans, drained and rinsed
  • 2 cups chicken broth
Seasoning Blend
  • 2 tsp chipotle powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • Juice of 1 lime
Topping Recommendations
  • ½ cup shredded cheese
  • Fresh cilantro
  • Salsa
  • Avocado or Greek yogurt

Method
 

  1. Preheat oven to 375°F.
  2. Add to a large casserole dish: rice, chicken, butternut squash, onion, black beans, chicken broth, lime juice, and all seasonings. Stir well so everything is evenly coated.
  3. Cover tightly with foil (key for soft, fluffy rice).
  4. Bake for 35-45 minutes, until rice is tender, chicken is cooked through, and liquid is absorbed.
  5. Optional finish: Remove foil, add cheese, and bake uncovered for 5 more minutes.
  6. Add your favorite toppings or garnishes and serve.
