Spicy California Roll Sushi Bowl

All the flavors of a California roll without the rolling. This easy sushi bowl combines seasoned rice, imitation crab, creamy avocado, crunchy cucumber, and spicy sriracha mayo for a quick lunch or dinner that's fresh, satisfying, and packed with flavor.

Ingredients
  

Rice
  • ½ cup white rice
  • ½ tbsp rice vinegar
Bowl Toppings
  • 8 oz imitation crab chopped
  • 1 avocado diced
  • 1 cucumber diced
  • 3 green onions sliced
For Serving
  • 1 tbsp toasted sesame seeds
  • Sriracha mayo to taste

Method
 

  1. Cook the rice according to package directions or in a rice cooker.
  2. Once cooked, fluff the rice with the rice vinegar and allow it to cool slightly.
  3. While the rice cooks, dice the avocado and cucumber, slice the green onions, and chop the imitation crab into bite-sized pieces.
  4. Divide the rice between serving bowls.
  5. Top with the imitation crab, avocado, cucumber, and green onions.
  6. Drizzle with sriracha mayo and sprinkle with toasted sesame seeds.
  7. Serve immediately and enjoy.

Notes

Add edamame for extra protein and fiber.
Use brown rice for additional whole grains.
Swap imitation crab for cooked shrimp, salmon, or tuna if desired.
Store ingredients separately for meal prep and assemble just before serving.
