Method
- Cook the rice according to package directions or in a rice cooker.

- While the rice cooks, dice the avocado and cucumber, slice the green onions, and chop the imitation crab into bite-sized pieces.
- Divide the rice between serving bowls.
- Top with the imitation crab, avocado, cucumber, and green onions.
- Drizzle with sriracha mayo and sprinkle with toasted sesame seeds.
- Serve immediately and enjoy.
Notes
Add edamame for extra protein and fiber.
Use brown rice for additional whole grains.
Swap imitation crab for cooked shrimp, salmon, or tuna if desired.
Store ingredients separately for meal prep and assemble just before serving.
