Sweet & Spicy BBQ Chicken Pizza

This easy BBQ Chicken Pizza is layered with tender chicken, smoky barbecue sauce, juicy pineapple, melted mozzarella, tangy pickled red onions, fresh jalapeño, and green onions. Made with a premade pizza crust, it is a quick and flavorful dinner that brings together the perfect balance of sweet, smoky, tangy, and spicy flavors.

Ingredients
  

  • 1 premade pizza crust
  • 1 tablespoon olive oil
  • cup barbecue sauce divided, plus additional for drizzling
  • 2 boneless skinless chicken breasts
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 slices of bacon cooked and crumbled
  • 1 8-ounce can pineapple chunks, drained well
  • 8 ounces shredded mozzarella cheese
  • 3 green onions thinly sliced
  • ¼ cup pickled red onions drained
  • 1 jalapeño thinly sliced or diced
  • 1 tablespoon chopped fresh cilantro

Method
 

  1. Preheat the oven according to the pizza crust package instructions. Place the pizza crust on a pizza pan or baking sheet.
  2. Wash and prepare all produce. Drain the pineapple chunks and pickled red onions well to prevent excess moisture from making the pizza soggy.
  3. Season both sides of the chicken breasts with salt and black pepper.
  4. Heat a skillet over medium heat. Cook the chicken for 5–7 minutes per side, or until the internal temperature reaches 165°F. Remove the chicken from the skillet, allow it to rest for a few minutes, and cut it into bite-sized pieces.
  5. Brush the pizza crust evenly with olive oil. Spread approximately ¼ cup of the barbecue sauce over the crust, leaving a small border around the edges.
  6. Sprinkle half of the mozzarella cheese over the barbecue sauce. Evenly arrange the cooked chicken, cooked bacon, pineapple, green onions, pickled red onions, and jalapeño over the cheese.
  7. Sprinkle the remaining mozzarella cheese over the toppings.
  8. Bake according to the pizza crust package instructions, usually 10–15 minutes, or until the cheese is melted and bubbly and the crust is golden and crisp.
  9. Remove the pizza from the oven and allow it to cool for 2–3 minutes.
  10. Top with fresh cilantro and drizzle with the remaining barbecue sauce. Slice and serve immediately.

Notes

For a milder pizza, remove the jalapeño seeds and membranes before slicing or omit the jalapeño.
For extra spice, leave the jalapeño seeds intact or add a drizzle of hot honey before serving.
Fresh pineapple may be substituted for canned pineapple. Cut it into small pieces so it cooks evenly.
Use a gluten-free pizza crust and certified gluten-free barbecue sauce to make this recipe gluten-free.
