Ingredients
  

  • 1 tbsp olive oil
  • ½ yellow onion diced
  • 3 garlic cloves minced
  • 1 tbsp tomato paste
  • 1 15 oz can crushed tomatoes
  • 1 cup chicken or vegetable broth
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes optional
  • 2 tbsp heavy cream or half-and-half
  • 1 tsp honey optional, if your tomatoes are acidic

Method
 

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add onion and cook for 4–5 minutes until softened.
  3. Stir in garlic and tomato paste and cook for 1 minute.
  4. Add crushed tomatoes, broth, basil, oregano, salt, pepper, and red pepper flakes.
  5. Bring to a simmer and cook for 15 minutes.
  6. Blend with an immersion blender until smooth (or carefully transfer to a blender).
  7. Stir in cream and honey, if using.
  8. Taste and adjust seasoning as needed.
