Marinate & Cook the Steak
- In a bowl, mix together the olive oil, garlic, lime juice, cumin, chili powder, onion powder, red chili flakes, salt, and pepper.
- Add the steak and coat all sides evenly.
- Marinate for at least 30 minutes (up to 24 hours for deeper flavor).
- Cook the steak using your preferred method (grill, pan-sear, or broil) until it reaches your desired doneness. Let rest before slicing.
Make the Chimichurri-Style Dressing
- Add white vinegar, olive oil, red peppers or chili flakes, parsley, cilantro, oregano, salt, and pepper to a blender or food processor.
- Blend until mostly smooth with a little texture remaining. Taste and adjust seasoning as needed.
Assemble the Bowl
- Add your base of choice to the bowl.
- Top with sliced steak and desired toppings.
- Drizzle generously with chimichurri dressing and finish with cheese or extra herbs if desired.
