Ingredients
  

Steak Marinade
  • ¼ cup olive oil
  • 4 garlic cloves minced
  • Juice of 2 limes
  • ¾ tsp cumin
  • ½ tbsp chili powder
  • ½ tsp onion powder
  • ¼ tsp red chili flakes optional
  • ½ tsp salt
  • ½ tsp black pepper
Chimichurri-Style Dressing
  • ¼ cup white vinegar
  • ½ cup olive oil
  • 1 –2 small red peppers seeded (or 1 tbsp red chili flakes for heat)
  • ½ cup fresh parsley
  • ¼ cup fresh cilantro
  • ¾ tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
Bowl Components
Recommended bases:
  • Chopped romaine or mixed greens
  • Plain rice or cilantro-lime rice
  • Quinoa
Recommended toppings:
  • Bell peppers
  • Red or white onion
  • Corn
  • Black beans
  • Tomatoes
  • Fresh cilantro
  • Cotija or feta cheese

Method
 

Directions
    Marinate & Cook the Steak
    1. In a bowl, mix together the olive oil, garlic, lime juice, cumin, chili powder, onion powder, red chili flakes, salt, and pepper.
    2. Add the steak and coat all sides evenly.
    3. Marinate for at least 30 minutes (up to 24 hours for deeper flavor).
    4. Cook the steak using your preferred method (grill, pan-sear, or broil) until it reaches your desired doneness. Let rest before slicing.
    Make the Chimichurri-Style Dressing
    1. Add white vinegar, olive oil, red peppers or chili flakes, parsley, cilantro, oregano, salt, and pepper to a blender or food processor.
    2. Blend until mostly smooth with a little texture remaining. Taste and adjust seasoning as needed.
    Assemble the Bowl
    1. Add your base of choice to the bowl.
    2. Top with sliced steak and desired toppings.
    3. Drizzle generously with chimichurri dressing and finish with cheese or extra herbs if desired.
