Ingredients
  

Salad
  • 1 English cucumber diced
  • 2 Roma tomatoes diced
  • 1 red bell pepper diced
  • ½ red onion finely diced
  • ½ cup fresh parsley finely chopped
  • 1 15 oz can Great Northern beans, drained & rinsed
  • 1 15 oz can cannellini (white kidney) beans, drained & rinsed
  • cup Kalamata olives sliced
  • ½ cup feta cheese crumbled
Dressing
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • tsp Dijon mustard
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 small garlic clove minced
Optional Add-Ons
  • Grilled chicken or shrimp
  • Cooked quinoa or farro
  • Chickpeas instead of one white bean
  • Fresh dill or mint
  • Arugula or spinach

Method
 

  1. Wash and dice all vegetables. Drain and rinse beans well.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, salt, pepper, and garlic.
  3. In a large bowl, add cucumber, tomatoes, bell pepper, red onion, parsley, beans, olives, and feta.
  4. Pour dressing over the salad and gently toss until everything is well coated.
  5. Let the salad sit for 15–30 minutes before serving to allow flavors to meld.
